
This recipe is a great, fresh and healthy appetizer to share at parties, summer bbq’s, to enjoy during Passover or any time you’re wanting to create something tasty & healthy with a bit of a crunch ! It’s simple, fresh ingredients pair well together and it’s very quick and easy to make.

Preheat your oven to 400 degrees Fahrenheit. You’ll need a box of Matzo. This simple recipe calls for: 4 Matzos, 1 Pear, sliced very thin, Arugula, Goat Cheese, Grape Tomatoes, Extra Virgin Olive Oil, Honey, Salt & Pepper.

While your oven is preheating, spray a baking sheet with olive oil cooking spray. Place 2-4 matzo crackers on your baking sheet and begin creating! I put the thinly sliced pears on first, then fill in the blanks with grape tomatoes ( you may halve the tomatoes if you like). Sprinkle the Matzo with crumbled goat cheese to your liking. Pop it in the oven and bake for about 4 minutes. Remove from the oven and drizzle some honey over the pears. Next, top with a handful of Arugula, drizzle a bit of olive oil on it, a shake of S&P and you’re ready to slice and serve. You can also just each have a whole one, picking it up like a piece of pizza and enjoy! A light, simple and delicious treat! #PureJoyFoodie
