
What’s for dinner tonight? I have a quick, easy and delicious recipe for you , Shrimp Linguine. If you have fresh shrimp, simply peel, rinse and set it aside. If you’re using frozen shrimp, be sure to have it thawed by the time you are ready to cook dinner. You will need to chop 4 cloves of garlic and set aside. Start by boiling a pan of water. I recommend adding a little bit of olive oil in it, so the pasta won’t stick. Once you’re water is boiling, turn down the heat a notch and add 8 oz. of linguine. Boil about 7 minutes or until your desired texture is reached. Drain the pasta and set aside. Next, in a large skillet, melt 2 tbsp of butter and 2 tbsp olive oil. Add your chopped garlic, and 1 tsp of crushed red pepper. Stir in your shrimp and cook it until it turns a pretty pink. Flip the shrimp and cook the other side until pink, as well. This should take about 1-2 minutes.

Now, add a tsp of oregano. Ohhh , can you smell how delicious this is going to be?! Add 4 cups of organic spinach and stir a bit. Add your pasta into the pan and 2 more tbsp of butter. Stir gently until it’s all blended together. Now, add a pinch of parsley, squeeze a half of a lemon on top and stir once more.

How simple was that ? Now, you are ready to plate! I recommend grating some fresh Parmigiano-Reggiano on top of each plate, just before serving. Normally, adding cheese with seafood is a no no, but it works with this recipe. It just adds a kiss of extra flavor to this delicious Shrimp Linguine. Enjoy !
