
My husband and I have decided to start eating a little healthier, so we are trying to incorporate more fish and veggies into our routine. Cooking fish may sound a bit scary and complicated ,for those of us who didn’t grow up by the ocean. I’ve chosen this recipe to share with you because it is quick, easy, accessible to you wherever you may live, and packs enough flavor for even non- fish lovers to enjoy! This recipe is delicious, healthy, gluten free and simple.

First, let me begin by saying that we have been finding great options for fresh fish at Whole Foods Market. This is great news for those of you who may live in the midwest and want fresh fish options, as well. I recommend buying wild caught where it’s available. If your Whole Foods doesn’t offer wild caught when you’re ready to try this recipe, farm raised and previously frozen fish is still good at this market, because the farming is regulated. Their employees seem to share great tips, as well, for newbies to cooking fish.
INGREDIENTS LIST : ( serves 2)
2 Halibut Fillets , cooking spray, 1/2 of a lemon (juice), 2 teaspoons olive oil, 1/2 cup gluten free panic crumbs, 1/4 cup freshly grated Parmesan, 1 Tbsp fresh parsley, 1/2 tsp garlic powder, and salt & pepper to taste.

I recommend using The Breville ( smart oven pro 1800 w) Toaster Oven. This has been a game changer for me! It’s truly amazing. I cook everything except our Thanksgiving turkey in it! Unless, of course, you’re doubling or tripling this recipe for a family dinner( my sister Michelle 🙂 )
Chop your fresh parsley. Next, line your baking pan with aluminum foil. Now we’re ready to prep your fish. Place the Halibut with the skin on the bottom, onto your baking sheet. Squeeze lemon over the top of the fish and then drizzle about a tsp of olive oil over each fillet. I like to rub it in, but you don’t have to. Give each fillet a dash of salt and pepper, to your liking. Next, combine the Panko bread crumbs, parmesan, garlic powder, and chopped parsley in a shallow bowl and mix it up. Generously sprinkle or spoon this mixture on top of your fillets. Place the baking sheet in your fridge for about 15-20 minutes, so your coating will set. ( You can skip this step, if you don’t have time and it will still turn out fine). Preheat the oven to 450 . When it’s ready, remove your pan from the fridge, lightly spray some cooking spray on top of your fish and place the pan in the oven to bake for about 15-20 minutes. With a fork, check to make sure that the translucence is gone and your fish is white and flaky. This will let you know that it’s done. So easy !
