Oodles of zoodles for din din tonight ! –
🍋🍤 SHRIMP & ROASTED TOMATO ZOODLES 🍤🍋
My RECIPE : I start with organic zucchini . You can use a simple hand held zoodle maker or for bigger portions, use the Kitchen Aid Spiralizer. Zoodle your zucchini then set it aside. Next, in a large skillet, pour a splash of olive oil & 2 tablespoons of butter . Chop 2 cloves of fresh garlic and sautee’ until fragrant .( do NOT let the garlic get brown , it will emit a bitter flavor instead, if it’s over cooked 😉) Next, rinse , peel & devein Shrimp. Add the shrimp to your pan and sautée for about 1-2 minutes on each side, until they turn a pretty pink !
Next, season with oregano 🌿 & crushed red pepper. ( I don’t use salt but you can add salt , pepper , lemon pepper seasonings if you like. ) Remove cooked shrimp. Add 2 more tablespoons of butter. Melt the butter & add in your zoodles. Stir until they are coated with the garlic butter sauce. Now, add in your roasted tomatoes 🍅. ( halve & roast , or for a quick fix – broil a few tomatoes in your toaster oven ! ) Plate your zoodles, add the shrimp & roasted tomatoes on top of each dish. Squeeze lemon all over. Grate fresh Parmigiano-Reggiano on top, just before serving. Delicious! 😋 & HEALTHY 👍🏻
