
There’s nothing better than a warm, perfectly cooked soft boiled egg, when you or the person you love, needs this comfort food. I don’t really even like eggs, but when I was a child and didn’t feel well, this was what my mom would fix to make me feel better, and it always did!

Let’s boil the perfect soft boiled egg together! Bring a saucepan of water to boil, cooking over medium to high heat ( about a 7 if using an electric stove). Be sure to choose a sauce pan that is large enough to cook your eggs in a single layer. Using a slotted spoon, place your eggs gently, one at a time, into the boiling water. Turn the heat down a bit to keep the water at a gentle boil, so that your eggs don’t get tossed around too much and crack.;) Boil for 6 1/2 minutes. If you prefer your eggs a little runny, I’d cook them for 6 minutes. Be sure to set a timer, as timing is everything with the perfect soft boiled egg! While you are waiting for your eggs to boil, fill a bowl up with cold water and ice cubes and set aside.

Once your timer goes off, it’s very important to gently remove each egg from the pot and place them in your bowl of iced cold water, for about a minute. Once the eggs are cool enough to touch, lift the egg out. Tap the egg’s shell with a fork to crack and then peel the shells off. Discard the eggshells and quickly rinse any remaining bits of shell off of the egg. You now have your perfectly cooked, soft boiled egg!

I like setting mine atop a piece of buttered sourdough bread. I take my fork to the eggs breaking them open and letting some of the yolk run onto the toast. I add a dash of Himalayan pink salt and fresh ground pepper , cut it up into pieces and be sure to eat it while it’s still warm . Enjoy ! #purejoyfoodie
