
Today I felt like having something warm and comforting, but still a little healthy. I chose to make my yummy Spinach & Artichoke Dip recipe that I’ve been tweaking for years! It’s a great dip to share and it’s on the healthier side, so you won’t feel guilty after indulging. I served mine with organic blue corn chips, but it’s delicious with pita chips, warm bread or crudités if you’re going for a healthier snack.

You’ll want to start by preheating your oven to 350 * and lightly grease your pan. I used a glass 9×9 oven safe dish. I also recommend setting out your cream cheese early , so it softens up by the time you’re ready to mix it.
What you’ll need :* 5 oz. of frozen spinach thawed & drained. (This is usually a half of a bag of frozen organic spinach ,but if you like to measure, then use a 1/2 cup. I love spinach, so I prefer that extra ounce!) * 1/3 cup sour cream, *8 oz. cream cheese,* 1/2 cup freshly grated Parmesan cheese. (I prefer Parmigiano-Reggiano) *1 clove of garlic, peeled and minced,* 1/4 teaspoon garlic powder, a large pinch of freshly chopped basil (or* 1/2 teaspoon dried basil),* 1 can (14oz.) artichokes (drain and slice into smaller bits, *1/3 cup of feta cheese and *1/2 cup of shredded mozzarella cheese . The mozzarella will be used as the topping, so use the amount that suits you. Sometimes I’m feeling really cheesy and other times I sprinkle less to keep it on the healthier side 🙂

Once you have your ingredients chopped and measured, it’s time to start mixing. Mix your cream cheese, sour cream, parmesan and garlic powder together. Get it mixed really well, then add your spinach (be sure to drain your spinach thoroughly, so your dip doesn’t turn soupy!) add your minced garlic and mix this all until completely blended. Now, stir in your chopped artichokes. It looks yummy already! (go ahead and sneak a taste, you know I always do 😉 Transfer your mixture into your dish and smooth it out with a rubber spatula. Next, add your feta cheese (this is what makes it so tasty!) pressing it into your dish.

Now you’re ready to place it in the oven to bake for about 20 minutes. Once it’s baked, sprinkle on your desired amount of mozzarella cheese on top and continue baking until the cheese is melted and bubbly. ( about 7-10 minutes more). Remove from oven and start dipping !
