
Avocado Toast is healthy, delicious and nutritious and there are many ways you can enjoy it. I’ll share today’s version with you, as it is so easy to make and with just a few ingredients. You will need an avocado, 1/2 of a lemon, a slice or 2 of bread ( I prefer whole grain ), Trader Joe’s Everything but the bagel seasoning, and an egg. I like a little more kick to my food so I also add a dash of crushed red pepper flakes, but that’s optional 🙂

To slice the avocado perfectly, you’ll want to run the knife lengthwise around the avocado. Doing this enables you to pull the avocado open with 2 perfect halves. Remove and throw away the pit. Scoop out the avocado into a bowl and mash it up with a fork. Squeeze about half of a lemon’s juice into it and sprinkle in some of your Everything but the bagel seasoning. Use your own judgement depending on how much flavor you like. I usually give it 3 shakes. Toast a piece of bread and spread the mixture on top . It’s really that simple and so good!

I scrambled an egg and added it on top of mine with a pinch of crushed red pepper flakes. Yum ! I made a sunny- side -up egg ( like my Grandpa used to like ) for my hubby’s avocado toast and sprinkled a bit of black pepper & Pink Himalayan sea salt on his.
