
Summer is nearing & chicken salad makes a great idea for a light lunch on those hot summer days, when you don’t feel like cooking. It’s so easy to make, tasty and healthy. This is also a great way to use up the end of that rotisserie chicken that’s been sitting in your refrigerator, half eaten! Just pick off & shred the chicken you want to keep and place it in a bowl. Clean and chop up 3 stalks of organic celery, a small organic apple and add these to your bowl. I like grapes in this recipe, but don’t buy them very often, as they can kill your dog if ingested. I had raisins in the cabinet, so I used about a 1/4 cup to add to the mixture, instead. I know raisins can be just as poisonous to your pet(since they are basically dried up grapes), but they are easier to control because they don’t roll all over the place like my grapes seem to do! lol ! If you’re not a grape or raisin fan, pineapple also makes a tasty addition to chicken salad. It’s one of those surprise ingredients that tastes really good in it , but no-one ever can guess what it is! I recommend using pineapple if you’re cooking you’re own chicken breasts to make chicken salad.
Now , with a large fork, mix up the chicken, celery, apples, raisins, add a dash of S&P and about a tablespoon or 2 of mayo, depending on how moist your chicken is. I prefer to use Primal kitchen’s Avocado Mayo, which is a lot healthier than regular mayonnaise, but either will work. A simple, tasty lunch recipe that is perfect for those hot summer days when you don’t feel like cooking or when you’re craving something “extra” but easy :). I like mine best on reduced fat triscuits over a bed of spinach and served with a few strawberries. How will you enjoy yours?
